The PCE-WAM 10 is a portable humidity detector designed for measuring water activity, which indicates the bioavailable water for microorganisms in various substances. It’s particularly useful in the food industry for shelf-life testing. The device has a measurement range of 0.01 to 1 aw with an accuracy of ±0.03 aw. It includes 3 sample trays for convenience and operates on 2 AAA batteries.

Each type of microorganism has a minimum water activity value below which no growth is possible. The higher the aw value of a food, the more perishable it is. Bacteria typically require a water activity of over 0.98, but significantly lower water activity of up to 0.6 can be tolerated by extremely halophilic bacteria, for example.
